The perfect fresh summer recipe when you want something with lots of flavour and minimal effort. This recipe is incredibly versatile - add or substitute your favourite vegetables or whatever you have on hand, like sliced peppers, avocado, cabbage, broccoli slaw or any others!

Try a store bought sweet chilli sauce or spicy peanut sauce.
Use pre-washed and shredded cabbage, slaw, spinach, lettuce or other leafy green.

Although these are best fresh, they can be stored in the refrigerator for 2-3 days. Simply wrap each individual roll in plastic wrap and store them in an airtight container.

Try pre-cooked thawed frozen shrimp!
Traditionally shrimp is used in Vietnamese rolls, however other protein options like strips of smoked tofu or tempeh can also be used as a quick vegetarian option.
ingredients
4 sheets of Rice paper
1/3 of a Cucumber (thinly sliced into strips)
1 Carrot, small (grated or thinly sliced into strips)
2 cups Baby Spinach
Dressing Ingredients
1/4 cup Peanut butter
1 Tbsp Soy sauce
1 Tbsp Chili garlic sauce
1 Tbsp Avocado Oil
4 Tbsp Water
How to Make Summer Fresh Salad Rolls
Step 1: Prepare veggies - thinly slice the cucumber, grate or slice the carrot.
Step 2: Prepare a pan of warm water. Make sure the pan is large enough and contains enough water to submerge the rice paper.
Step 3: Soak rice paper in the warm water for 5 seconds, then place it on a flat surface and add your fillings to the center. Fold the bottom edge over the filling, then the side edges, and then roll from bottom to top keeping the filling held in firmly (like a burrito).
Repeat this step for each fresh salad roll making sure to divide the filling evenly to make 4 rolls.
Step 4: For the spicy peanut sauce, add all of the ingredients (peanut butter, soy sauce, chili garlic sauce, avocado oil, and water) to a mixer and blend (option to whisk with a fork in a bowl). Add more water by the tablespoon to thin out the sauce to desired consistency.
Step 5: Serve the prepared spring rolls with the spicy peanut sauce for dipping, and enjoy!
