Vegan Mac and Cheese
A classic comfort food - you won't believe how creamy and cheese-like this vegan, dairy-free mac and cheese is! Many of my clients have some form of dairy sensitivity or intolerance, making their beloved cheesy comfort foods like Mac and Cheese not so accessible anymore. I’m personally dairy-free too and have been craving Mac and cheese! So here we are, in true dietitian fashion...a delicious Mac and cheese loaded with veggies! This is a great meal-prep recipe, but you could also double the sauce and prep this dish ‘fresh’! If you’re gluten-free, simply substitute with gluten-free pasta. If you’re a meat-eater, add extra protein by tossing in some cooked chicken or hemp hearts for a nutty protein twist for my vegan friends!

ingredients
Macaroni
Frozen broccoli florets
Sweet potato
Carrot
Raw Cashews
Nutritional Yeast
Spices - onion powder, garlic powder, paprika, salt
White miso paste
Lemon Juice
How to make Vegan Mac and cheese
Step 1: Bring a large pot of water to boil and cook pasta.
Step 2: When pasta is almost cooked, add frozen broccoli and cook until tender, about 3-4 minutes.
Step 3: While pasta is cooking prepare your cheese sauce:
In a saucepan add sweet potato, carrot, cashews and water.
Cook on medium-high until soft, about 10-15 minutes.
Step 4: Transfer the cooked sweet potato, carrot, cashews and water to a blender.
Step 5: Add onion powder, garlic powder, paprika, salt, miso paste and lemon juice to blender. Blend until smooth.
Step 6: Taste and adjust seasonings to desired taste. Add additional water by the tablespoon to thin out if needed.
Step 7: Once the pasta and broccoli are tender, drain the water and return to the large pot.
Step 8: Add cheese sauce and stir to coat the pasta and broccoli. Enjoy!
