Craving something fruit and refreshing? This smoothie is it! Frozen blueberries with tart apple juice and zingy ginger. Use your favorite dairy or plant-based yogurt to bump up the protein and keep you satisfied.

I love a good smoothie - they’re a quick and convenient way to get in a whole host of diverse, plant-based foods. One of my favourite smoothie hacks to boost both flavour and nutrition is to add in different herbs and spices. Some of my favourites to add include basil, mint, cinnamon, or ginger - like in this Blueberry Ginger Smoothie.

 
 

ingredients

  • 1 large banana

  • 1/2 cup dairy or plant-based milk or yogurt

  • 1 cup frozen blueberries

  • 1-inch grated ginger or 1 tsp ground ginger

  • 1 cup unfiltered apple juice (or apple cider)

  • 1 tbsp chia seeds

HOW TO MAKE BLUEBERRY GINGEr SMOOTHIE

Step 1: In an upright blender, add the banana, frozen berries, chia seeds, and ginger.

Step 2: Add the milk (or yogurt) and apple juice.

Step 3: Blend until smooth, adding water or additional apple juice until desired consistency.

Ingredients

  • 1 large banana
  • 1/2 cup dairy or plant-based milk or yogurt
  • 1 cup frozen blueberries
  • 1-inch grated ginger or 1 tsp ground ginger
  • 1 cup unfiltered apple juice (or apple cider)
  • 1 tbsp chia seeds

Instructions

  1. In an upright blender, combine ingredients and blend until smooth.
  2. Additional apple juice or water can be added to achieve desired consistency.

Notes:

Substitutions:

  • Swap in mixed frozen berries to increase plant diversity
  • Add nut butter (almond would be great!) to further boost protein content)
  • Don't have an upright blender? Most smoothies can be made in a tall glass or jar with an immersion blender for easy clean-up.
